Oven Roasted Halibut Recipe

Oven Roasted Halibut Recipe - This recipe requires a little bit of skill and experience. I consider it an intermediate level recipe but that’s not to say that anyone couldn’t try it. I love the cheese and the delightful flavor it brings to this dish. Serve with steamed seasonal vegetables and a nice light white wine. Enjoy!
Ingredients to make Oven Roasted Halibut
1 large wedge Parmigian cheese?
2 cups arugula leaves (no stems)?
1-2 Tbsp. vegetable stock?
1 Tbsp. extra virgin olive oil?
4 pieces halibut (each 5-6 ounces)?
Kosher salt?
1 Tbsp. unsalted butter??
Steps to make Oven Roasted Halibut
1. To prepare Parmesan tuiles, preheat oven to 350°F.
2. Using a vegetable peeler, shave 4 to 8 strips, each 1/2-inch wide and about 6 inches long, from the wedge of cheese.
3. Lay cheese strips in a single layer, not touching, on a parchment-lined baking sheet and bake 3 to 4 minutes or until they begin to turn golden brown.
4. To prepare arugula purée, blanch arugula in boiling salted water for 1 minute, then immediately refresh in ice water.
5. Drain and purée leaves in a blender with 1 Tbsp. each stock and oil until smooth, adding a little more stock if needed for a smooth consistency.
6. To prepare halibut, preheat oven to 400°F.
7. Season halibut with salt to taste.
8. Melt butter in a heavy-bottomed ovenproof skillet, place halibut in skillet, skin side up.
9. Transfer skillet to oven and roast for 6 minutes, depending on thickness of fish.
10. Remove while slightly underdone.
11. To serve, spoon arugula purée on plates and top with a piece of halibut.
12. Garnish each plate with 1 or 2 tuiles.
Spicy Grilled Alaska Chili and Lime Halibut Recipe

Halibut is nice clean fish. The flavor is simple yet full bodied. You won’y get that fishy aroma with it either. It’s easy to cook and will flake easily and fall off of the bone.
Ingredients:
•4 steaks of Alaska Halibut.
•Rice vinegar, ½ a cup.
•Fresh limejuice, ½ a cup.
•Grape seed oil, ¼ cup.
•1 cup of sweet Thai chili sauce.
•Black sesame seeds, ¼ cup.
Directions:
Mix all these ingredients together and then marinate the Alaskan steaks for about one hour. Make sure both sides are marinated well. grill the steaks on the barbecue grill until the halibut flakes when you test it with a fork. This makes for 4 servings. The sweet Thai chili sauce is available at any Asian specialty market.

Ingredients to make BBQ Healthy Halibut Steaks
1/4 cup lemon juice
1 tablespoon vegetable oil
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped
4 halibut or tuna steaks, about 1 inch thick (about 2 pounds)
1/4 cup chopped fresh parsley
1 tablespoon grated lemon peel
Directions to make BBQ Healthy Halibut Steaks
Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.
In shallow glass or plastic dish or resealable food-storage plastic bag, mix lemon juice, 1 tablespoon oil, the salt, pepper and garlic. Add fish; turn several times to coat with marinade. Cover dish or seal bag and refrigerate 10 minutes.
Remove fish from marinade; reserve marinade. Cover and grill fish 4 to 6 inches from medium heat 10 to 15 minutes, turning once and brushing with marinade, until fish flakes easily with fork. Discard any remaining marinade.Sprinkle fish with parsley and lemon peel.

Ingredients to make Shortcut Low Fat Halibut
1 pound halibut steaks
1/3 cup light or fat free Italian dressing
1 tablespoon lemon juice
1/4 teaspoon pepper
1/4 teaspoon paprika
parsley and lemon slices for garnish, optional
Directions to make Shortcut Low Fat Halibut
Place halibut steaks in a shallow microwave dish, placing thickest parts towards outside edges of dish. Combine remaining ingredients in a cup and pour over the halibut steaks. Cover dish with plastic wrap; refrigerate for 30 minutes, turning once to let marinade flavor both sides of halibut.
Turn back one corner of the plastic wrap to vent dish and microwave on HIGH power (100%) for 4 to 5 minutes. Rotate dish a quarter turn after 2 minutes. Let stand 3 minutes before serving. If desired, garnish halibut steaks with lemon slices and parsley.

Ingredients to make Amazing Alaska Halibut
1 cup dry white wine
2 teaspoons salt
1 1/2 pounds alaska halibut steaks — thawed if necessary
1/4 cup fine dry bread crumbs
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup minced green onions
Directions to make Amazing Alaska Halibut
Combine wine and salt; pour over halibut. Marinate in refrigerator at least 1 hour. Drain halibut on paper towels; dip both sides in bread crumbs.
Place halibut in shallow buttered baking dish. Combine sour cream, mayonnaise and green onions; spread over halibut. Sprinkle with paprika.
Bake at 450 F for 10 minutes per inch of thickness, measured at thickest part, or until halibut flakes when tested with a fork.
