Ingredients to make BBQ Healthy Halibut Steaks

1/4 cup lemon juice

1 tablespoon vegetable oil
1/4 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, finely chopped
4 halibut or tuna steaks, about 1 inch thick (about 2 pounds)
1/4 cup chopped fresh parsley
1 tablespoon grated lemon peel

Step 1:

Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.

Step 2:

In shallow glass or plastic dish or resealable food-storage plastic bag, mix lemon juice, 1 tablespoon oil, the salt, pepper and garlic. Add fish; turn several times to coat with marinade. Cover dish or seal bag and refrigerate 10 minutes.

Step 3:

Remove fish from marinade; reserve marinade. Cover and grill fish 4 to 6 inches from medium heat 10 to 15 minutes, turning once and brushing with marinade, until fish flakes easily with fork. Discard any remaining marinade.Sprinkle fish with parsley and lemon peel.

1 md Pineapple, @ 2lb, peeled, cored, cut in chunks
3/4 c Unsweetened Pinapple Juice
2 tb Lime Juice
2 cl Garlic, Minced
1/2 ts To 1 ts Jalapeno Pepper
2 tb Minced Cilantro
1 tb Cornstarch
2 tb Cold water
2 tb To 3 Tb Sweetener
Salt Pepper

Step 1:Heat Pineapple, Juices, Garlic and Jalapeno pepper to boiling in a medium saucepan; Reduce heat and simmer, uncovered about 5 minutes. Stir in cilantro; Heat to boiling.
Step 2:Mix Cornstarch and cold water, Stir into boiling mixture. Boil, stiring constantly, until thickened. Remove from heat; Cool 2-3 minutes. Stir in sweetener. Season to taste with salt and pepper.

Ingredients to make Halibut and Cucumber Sauce

1/2 c Cucumber, Shredded
1/2 c Sour Cream
1/4 c Miracle Whip
1 tb Chives, Snipped
2 ts Lemon Juice
1/4 ts Salt
1 ds Pepper
2 lb Halibut, Fresh
1/4 c Butter
1 ts Salt
1/8 ts Pepper
1 Paprika

Directions to make Halibut and Cucumber Sauce

Step 1:Blend shredded cucumber with sour cream, Miracle Whip, chives, lemon juice, 1/4 t salt and dash of pepper. Mix well and chill until serving time.
Step 2:Place the halibut in a well greased wire grill basket. In a sauce pan melt the butter. Stir in the 1 t salt and 1/8 t pepper. Grill the halibut over medium-hot coals for 5-8 minutes depending on thickness of steaks. Brush with butter mixture occasionally.
Step 3:Turn and baste with the remaining butter mixture. Grill the halibut until it flakes easily with a fork, 5-8 minutes more.
Step 4:Sprinkle halibut with paprika and serve with chilled cucumber sauce.
